Keto Avocado Chocolate Mousse
Ingredients:
Flesh of 1 avocado
1/4 cup unsweetened cocoa powder
1/3 cup Erythritol or 6 pitted Medjool dates (if paleo, not sugar-free)
1 1/4 cup canned coconut cream
1 tsp vanilla extract
Directions:
- In a blender, scoop out the ripe avocado flesh, unsweetened cocoa powder, sugar-free crystal sweetener (or pitted dates), canned coconut cream, and vanilla extract.
- Blend until smooth, about 1 minute on high speed.
- Transfer the chocolate mousse into ramekins and refrigerate for at least two days in the fridge. Wrap each ramekin to prevent the top from drying out.
- Serve with chocolate flakes or unsweetened desiccated coconut.
