Recipe: Turkey & Quinoa Bowl
INGREDIENTS
2 tbsp. olive oil
1 lb. ground turkey
1 red onion, diced
2 garlic cloves, minced
1 can chopped tomatoes
1 tsp. dried oregano
2/3 cup quinoa
4 cups baby spinach
1/3 cup low-fat feta, crumbled 2
tbsp. balsamic vinegar
1 avocado, diced
DIRECTIONS
- Heat a tablespoon of olive oil to medium heat in a pan. Pan-fry turkey, onion and garlic for 5 minutes.
- Stir in the chopped tomatoes and dried oregano.
- Bring to a boil. Stir in the quinoa. Reduce heat and simmer for 15 minutes.
- Serve on a bed of baby spinach, dressed with balsamic vinegar and olive oil. Top with diced avocado and crumbled feta cheese
